Cheesecake orange passion

Ingredients
For 8 servings
- 120 g 120 g Sugar
- 50 g 50 g Butter
- 1 1 Orange
- 3.5 3.5 gelatin sheet
- 300 g 300 g Philadelphia
- 100 g 100 g Small read
- 10 cl 10 cl Liquid cream
- 3 3 Egg
- 3 3 Fruit of passion
Method
- 1.Sweet paste: Mix 100 grams of cookies and add 50 grams of soft butter. Stir at the bottom of a 20 cm mould.
- 2.Passion juice: Pass through the fine sieve (or at the sieve) the pulp of the 3 fruits of passion (well squeeze!) to obtain about 60 grams of juice.
- 3.Cheesecake cream: In a saucepan, mix 3 eggs, 120 grams of sugar, 40 grams of water and 100 grams of liquid cream and cook gently until thickened, whisk constantly. Add 2 gelatin leaves previously soaked a few minutes in cold water, then when the mixture is about 60°C add 300 grams of philadelphia, then the passion juice. Mix with the plunger and put on the sweet dough.
- 4.Orange frozen: Press orange (about 200 grams of juice), heat and add 1 and a half sheets of gelatin previously soaked in cold water. Cool to room temperature and pour over cheesecake.
