Italian clafoutis with black cherries and amarena

- 750 g 750 g black cherries
- 250 g 250 g of amarena cherries (in italian grocery)
- 25 cl 25 cl liquid cream at 35% m.g.
- 25 cl 25 cl organic whole milk
- 100 g 100 g of red sugar
- 50 g 50 g of flan powder
- 5 5 eggs
- 5 5 egg yolks
- butter and sugar for the mould
Method
- 1.Start by preheating your oven to 180 °C. Meanwhile, rinse the cherries thoroughly and dry them with absorbent paper. This is important to avoid excess water during cooking. Take your cherries gently, then carefully remove them while keeping their shape round. Place them in a bowl and coat them with half the sugar. Mix slightly. In another salad bowl, pour the cream and milk. Add the whole eggs and the yolks, then incorporate the flan powder and the rest of the sugar. Shake vigorously until you get a smooth and homogeneous mixture. Butter and sugar generously your mold. Arrange three quarters of the sweet cherries at the bottom, spreading them well. Gently pour the flan cream over it. Scatter the rest of the cherries on the surface of the clafoutis. They will cook lightly and decorate your dessert. Bake for about 45 minutes. The clafoutis is ready when the cream is almost frozen but still slightly trembling in the center, with a beautiful golden colour on the surface. Let cool slightly before serving so that the texture is perfect!
