Ingredients
For 4 servings
- 250 g 250 g butter
- 140 g 140 g sugar
- 2 2 egg yolks
- 2 2 eggs
- 5 cl 5 cl water
Method
- 1.Put the water in a saucepan, add the sugar, and bring to a boil. Brush the sugar from the outer edges toward the inside of the saucepan using a pastry brush. The temperature must reach 120°C.
- 2.In a bowl, beat the eggs and yolks together with an electric whisk. Pour in the syrup in a thin stream and keep beating. Add the softened butter. Refrigerate until needed.
