Mocha Buttercream

Ingredients
For 6 servings
- 6 6 egg yolks
- 250 g 250 g sugar
- 300 g 300 g unsalted butter
- 5 5 drops coffee extract
- 7 cl 7 cl water
Method
- 1.Put the sugar and water in a saucepan and heat over moderate heat until it reaches 121°C (measure with a sugar thermometer).
- 2.Meanwhile, put the egg yolks in a bowl and beat them at maximum speed for at least 10 minutes.
- 3.Once the sugar has turned to syrup, pour it in a thin stream into the yolks without stopping the mixer. Keep beating well until the bowl is completely cold (you can place your hands on the dish).
- 4.Once the bowl is cold, add the 5 drops of coffee extract while continuing to beat, and gradually add the soft butter cut into small pieces.
- 5.The mocha buttercream is ready. Wait until it is cold before applying it to your cake.
