Buttercream: foolproof recipe

Ingredients

- 125 g 125 g soft butter
- 75 g 75 g caster sugar
- 1 1 egg
Method
- 1.Work the diced butter with a spatula until it is reduced to a smooth paste.
- 2.Mix the whole eggs with the sugar in a saucepan over a bain-marie and work until the mixture forms a ribbon.
- 3.Add the chosen flavouring, then place the saucepan in a container of cold water and stir until the cream has cooled.
- 4.Gradually incorporate the buttercream.
- 5.Use the cream for a cake (about 8 servings) or keep refrigerated and consume quickly.
