Ingredients

- 30 cl 30 cl Flower cream
- 4 4 Egg yolks
- 40 g 40 g Sweet nut with candied fruit
- 10 g 10 g Cassonade
Method
- 1.Preheat oven th 3/4 (100°C).
- 2.In a saucepan, heat the cream and add the nougat to pieces and melt over low heat for 5 min.
- 3.In a salad bowl, beat the egg yolks and pour the cream and mix.
- 4.Divide the preparation into 4 ramequins and bake in the water bath for 1h10.
- 5.After this time, let the creams cool in the refrigerator for at least 2 hours.
- 6.When serving, sprinkle with brown sugar and caramelize the creams with a torch.
