- 20 cl 20 cl whole liquid cream
- salt
- 1 1 lime or lemon
Method
- 1.Put the cream in the fridge so it sets better.
- 2.Squeeze the juice of one citrus. Take the cream out of the refrigerator, put it in a salad bowl, and start beating it as for a whipped cream, adding a pinch of salt so it stiffens better.
- 3.Once it has set well, add the citrus juice and continue whisking while reducing the speed. Taste and adjust the seasoning with salt and citrus.
