Chocolate mousseline cream

Ingredients
For 6 servings
- 25 cl 25 cl milk
- 80 g 80 g sugar
- 30 g 30 g flour
- 3 3 egg yolks
- 80 g 80 g unsalted butter
- 80 g 80 g single cream
- 80 g 80 g chocolate with at least 60% cocoa
Method
- 1.Prepare a pastry cream: in a bowl mix the sugar and flour. In another bowl mix the milk and the egg yolks. Combine the two mixtures.
- 2.Thicken over low heat, stirring constantly.
- 3.Make a ganache: in a small saucepan heat the single cream, then add the previously grated chocolate. Mix well.
- 4.Mix the still-warm pastry cream with the ganache. Cover and let cool.
- 5.As soon as the cream is cold: whisk it until it has the consistency of a mayonnaise.
- 6.Beat the butter into a smooth paste.
- 7.Mix the cream and butter and whip until it reaches the consistency of a mousse.
