Croquettes wasabi county

Ingredients
For 4 servings
- 300 g 300 g of AOP County
- 2 2 new onion boots
- 2 c. à café 2 teaspoons of Espelette pepper
- 50 g 50 g butter
- 60 g 60 g flour
- 30 cl 30 cl of whole milk
- 400 g 400 g panko breadcrumbs
- 4 4 eggs
- 30 cl 30 cl of sunflower oil
- 1 1 whole egg
- 1 c. à café 1 teaspoons of wasabi
- 1 1 green lemon
- mill pepper
- salt flower
Method
- 1.Sauté the white onions in butter for a few minutes (without colouring).
- 2.Add flour and milk to create a béchamel.
- 3.Add a grated county mountain, a powdered Espelette chilli càc and the green of young chiseled onions.
- 4.Unload on a plate and freezer.
- 5.In a high and narrow container, add the whole egg, wasabi, salt, pepper and all sunflower oil. Mix with the diver.
- 6.Make pretty little balls.
- 7.Bread them in English by rolling them in flour, whole egg and panko breadcrumbs.
- 8.Fry for 2 minutes.
- 9.Dress with wasabi mayonnaise.
