Nougat delight

Ingredients
For 4 servings
- Nougat
- 20 cl 20 cl Liquid cream
- 2 2 Egg white(s)
- 2 2 Orange(s)
- 120 g 120 g Fruit confit(s)
- 2 c. à soupe 2 tablespoons Ice sugar
- 100 g 100 g Sugar powder
Method
- 1.Remove the zest from the oranges, mince them finely and plunge them 1 min into boiling water, drain them and start the operation again.
- 2.Pour the sugar powder into a saucepan, add 10 cl of water and bring to a boil. Boil 2 min and add the zests and cook for 15 min.
- 3.Get the zests out of the syrup and reserve them.
- 4.Allow the ice to soften at room temperature.
- 5.Put the cream in whipped cream, when it is hard, add the icing sugar in rain while continuing to whisk.
- 6.Gently mix chantilly and softened ice.
- 7.Mount the whites in firm snow and incorporate them in turn into the preparation by lifting well. Add the candied fruit. Spread the foam in 6 cups and place in a cool place.
- 8.When serving, decorate with candied zests.
