Easy Overnight Oats

Ingredients
For 2 servings
- 1 3/4 cups oat milk (see notes)
- 1 1/2 teaspoons to 3 teaspoons maple syrup, plus more to taste
- 1 c. à café vanilla paste or extract (optional)
- 1 /4 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume1 cup rolled oats (about 3 3/4 ounces; 105g)1 tablespoon chia seeds
- 1 tasse rolled oats (about 3 3/4 ounces; 105g)
- 1 c. à soupe chia seeds
- Fruit, for serving (optional)
Method
- 1.In a 1-quart container or medium bowl, whisk together oat milk, maple syrup, vanilla paste or extract (if using), and salt until well combined.
- 2.Add oats and chia seeds and stir to combine.
- 3.Refrigerate until oats have softened and thickened, at least 8 hours and up to 24 hours. Sweeten with additional maple syrup as needed and serve with fresh fruit, if desired.
