Method
- 1.Start by preparing your endives: cut about 1 cm from the base, then wipe them thoroughly with a clean cloth.
- 2.Gently detach about twenty beautiful leaves around the endives and put them nicely on your serving dish.
- 3.Thin the heart of the endives thinly, like a small rag.
- 4.In a salad bowl, prepare your sauce by mixing the mayonnaise with the soy sauce, then incorporate the endive ragnade and the surimi crumbs into the sauce by mixing gently.
- 5.Garnish each endive sheet with this creamy preparation, then finish with freshly chiseled chives before serving.
