Greek Fava

Ingredients
For 4 servings
- 500 g 500 g Broken peas
- 2 Onion(s)
- 2 2 Branches Flat hair
- 1 1 Branches Romarin
- 0.5 0.5 Lemon(s)
- 8 8 Extra virgin olive oil
- Salt, pepper
Method
- 1.Preparation start
- 2.The day before, soak the broken peas in 1.5 l of unsalted water.
- 3.Start of cooking
- 4.The next day, rinse the broken peas and place them in a saucepan. Cover again with 1.5 l of water, the favas must be completely immersed. Bring to a boil by regularly foaming the surface.
- 5.Cooking
- 6.As soon as the water ends, add the chopped onions, rosemary, 5 tbsp. olive oil and a pinch of pepper. Let simmer 1 hour over medium heat. The peas must be melted, but check that they do not stick to the bottom of the pan.
- 7.Mixing
- 8.Drain and pass the peas in a blender with lemon juice and 2 tbsp. of olive oil. The texture must become creamy. Let it cool.
- 9.Dressing
- 10.Place in a hollow plate and add 1 cup of coffee, olive oil, fresh parsley, salt and pepper.
