Lemon mascarpone flan and khaki coulis

Ingredients
For 4 servings
- 250 g 250 g mascarpone
- 4 4 eggs
- 80 g 80 g sugar
- 20 cl 20 cl of liquid cream
- 50 g 50 g of maize starch
- juice and zest of 1 organic lemon
- 1 1 mature khaki
- juice and zest of 1 small organic lemon
Method
- 1.Preheat the oven to 180 °C (th. 6).
- 2.Drain the eggs with the sugar until the mixture whitens.
- 3.Add the mascarpone, cream and starch. Mix. Stir in the juice and grated lemon zest. Pour into a cake pan bloated with baking paper. Bake for 35 minutes. Let cool, then place in a cool place.
- 4.Peel the khaki and mix it finely with the juice and lemon zest.
- 5.Serve the fresh flan with the khaki coulis.
