Mother's Day Chocolate Cake

- 200 g 200 g Chocolate pastry black
- 150 g 150 g Sweet butter
- 150 g 150 g Sugar powder

- 80 g 80 g Wheat flour
- 1 1 sachet(s) Chemical yeast
- 20 g 20 g Cocoa powder unsweetened
- Fine salt
- 1 c. à café 1 cup of coffee Vanilla extract
- 150 g 150 g Raspberry(s)
- 20 g 20 g Ice sugar
Method
- 1.Preheating
- 2.Start by preheating your oven to 180°C (th.6) to make it warm when baking the cake. Prepare a round mould of about 22 cm, buttering and flouring it carefully to ensure an easy release and preserve the shape of the cake.
- 3.Preparation of dough
- 4.Gently melt the black pastry chocolate and the sweet butter cut into pieces with a bath-sea or microwave. Stir regularly to obtain a smooth and shiny texture. In another container, whisk the whole eggs with the sugar powder until the mixture whitens, then incorporate the vanilla extract. Then add the sieved flour, the chemical yeast, the bitter cocoa, and a pinch of salt. Mix well to obtain a homogeneous dough. Add the melted chocolate-butter mixture to the preparation and whisk until the dough is smooth and without lumps.

- 6.Pour the cake dough into the prepared pan. Smooth the surface with a spatula. Bake in the preheated oven and cook for 25 to 30 minutes. Check the cooking by planting the blade of a knife in the centre: it must come out slightly damp to keep the cake mellow. Let the mould cool down slightly, then demolish it on a grid to allow it to cool completely.

- 8.Place the completely cooled cake on a serving dish. Divide the fresh raspberries harmoniously on top of the cake. Sprinkle the ice sugar generously with a small colander to give a festive and refined look, ideal for Mother's Day. For an extra touch, add some mint leaves if desired.
