Spinach mousse salted waffle, Parma Jam AOP

Ingredients

- 100 g 100 g Parma Jam AOP
- 1 1 eggs
- 100 g 100 g flour
- 180 g 180 g milk
- 40 g 40 g grated cheese
- 6 g 6 g powdered chemical yeast
- 3 pincée 3 pinches of salt
- 20 g 20 g extra virgin olive oil
- butter
- 200 g 200 g fresh cheese spread
- 70 g 70 g boiled, pressed and mixed fresh spinach
- salt and pepper
Method
- 1.For waffle paste: mix milk, oil and egg yolk. Add cheese and salt. Stir in egg white in snow, then sifted flour with chemical yeast.
- 2.Grease the waffler and pour some dough. Cook the waffle, then continue to prepare the waffles until the dough is exhausted.
- 3.Mix the prepared spinach with the cheese, season with salt and pepper and mix again. Serve the waffles with spinach moss and Parma Jam.
