Aromatized marshmallow

Ingredients
For 4 servings
- 10 g 10 g of Maizena
- 10 g 10 g of icing sugar
- 1 1 Flavours and dyes of choice
- 8 8 leaves of gelatin
- 1 pincée 1 pinches of citric acid
- 150 g 150 g sugar
- 50 g 50 g glucose
- 5 5 egg whites
Method
- 1.Ramp the gelatin leaves in water.
- 2.Mix sugar, glucose, 50 g water and citric acid together.
- 3.Heat to 120°C.
- 4.Remove the gelatin leaves from the water, dynamise well and incorporate them into the sugar/water/glucose/acid C mixture.
- 5.Beat the egg whites slightly.
- 6.Pour the hot sugar/gelatin over the egg whites as for an Italian meringue. At the end, the whites must make a 'bird's bay'
- 7.Continue to mix by gradually incorporating the dye until the desired colour is obtained and then some flavour tastes.
- 8.Sprinkle your surfaces or moulds that will contain the marshmallow.
- 9.With a wide socket or spoon pocket, gently place the marshmallow in the mould or surface.
- 10.Leave in cold and harden.
