- 1.2 kg 1.2 kg Potato puree
- 0.75 l 0.75 l Whole milk
- 0.25 l 0.25 l Thick fresh cream
- 2 2 garlic pod(s)
- 30 g 30 g Butter
- Nutmeg
- Salt
- Pepper
Method
- 1.Preheating the oven and preparing the dish
- 2.Preheat your oven to 160°C so it is warm when baking the gratin. Meanwhile, peel the cloves and rub them generously inside a gratin dish. Then butter the bottom and edges with the butter to prevent the preparation from hanging and to bring even more gourmetness to the cooking.
- 3.Preparation of the creamy base
- 4.Pour whole milk and thick fresh cream into a large saucepan. Add the remaining garlic pods finely chopped or crushed, then season with salt, pepper and a pinch of nutmeg depending on your taste. Gently heat the set stirring regularly to mix the flavors well, without boiling too much.
- 5.Addition of potato mashed potatoes
- 6.Incorporate potato mashed potatoes into the warm preparation gradually, mixing carefully to achieve a smooth, smooth and well-bound texture. Make sure that the mashed milk absorbs the cream mixture well in order to avoid lumps. Taste and then adjust seasoning if necessary to achieve a tasty and balanced basis.
- 7.Plating of gratin
- 8.Transfer the mixture to the gratin dish before it is ground and buttered. Spread it regularly with a spatula or the back of a spoon to obtain a uniform surface. Smooth the top in order to promote a homogeneous cooking and a nice coloring. You can add a little extra nutmeg on top if you want.
- 9.Bake gratin
- 10.Bake the dish in the preheated oven and cook until the gratin is warm to heart and the top takes a beautiful golden color. Watch the cooking at the end of the course: the top must be slightly scratched without burning. If necessary, increase the temperature very slightly over the last minutes to accentuate the color.
- 11.Rest before service
- 12.Take the gratin out of the oven and let it rest for a few minutes before serving. This rest period allows the preparation to strengthen slightly, which facilitates the service and enhances its melting texture. Serve warm, directly in the dish, for a friendly and generous time to share with family.
