Grilled dates with vanilla ice cream, olive oil & sea salt

Ingredients
For 4 servings
- 3 -4 medjool dates per person
- vanilla ice cream to serve
- extra virgin olive oil for drizzling
- sea salt flakes for sprinkling
Method
- 1.Remove the stones from the dates by slicing them open on one side (but not cutting fully through – you want to keep them in one piece). Thread the dates onto metal skewers (or wooden skewers that have been soaked in water for at least 30 mins) and cook over direct heat on the barbecue for 1-2 mins on each side, or until lightly charred.
- 2.Roughly chop the dates. Scatter over the ice cream, then drizzle with olive oil and sprinkle with sea salt.
