Ingredients

- 1 c. à soupe olive oil
- 1.5 tasse diced celery
- 1.5 tasse diced carrots
- 1 tasse diced onion
- 1 c. à soupe dried parsley
- 1 bay leaf
- 3 tasse beef stock
- 3 tasse chicken stock
- 2 tasse roasted white turkey meat
- 1 c. à café salt
- 1 c. à café ground black pepper
- 0.75 tasse rotini pasta
Method
- 1.Heat oil in a large pot over medium heat. Add celery, carrots, onion, parsley, and bay leaf; cook until vegetables are tender, about 10 minutes. Add beef stock, chicken stock, turkey, salt, and black pepper; bring to a boil. Reduce heat, cover pot, and simmer until soup is heated through, about 15 minutes.
- 2.Stir rotini into soup; cook until pasta is tender yet firm to the bite, about 15 minutes.
