The French meringue

Ingredients
For 50 servings
- 250 g 250 g egg s
- 200 g 200 g of sour sugar
- 100 g 100 g of icing sugar
Method
- 1.Preheat oven to 90°C (th3).
- 2.Tam the icing sugar over a bowl to obtain a very fine powder.
- 3.Start riding white snow with a drummer.
- 4.When the whites begin to rise, gradually pour the sour sugar and whisk until the whites are firm.
- 5.Then add the ice sugar to the Maryse.
- 6.Once the meringue is smooth and shiny, grease a socket pocket and poach the meringues on a plate covered with baking paper.
- 7.Bake the plate in a preheated oven at 90°C (th3) for 1H30.
