Ingredients

- 150 g 150 g sugar powder or meal sugar
- 55 g 55 g egg whites
- 40 g 40 g of water
Method
- 1.Preparation of syrup
- 2.In a clean saucepan, pour water and sugar.
- 3.Mix slightly by making small circles with the saucepan.
- 4.Cook over high heat.
- 5.Once the mixture starts boiling, place a thermometer.
- 6.When the syrup reaches a temperature of 110°C, start to mount the whites in snow.
- 7.When the syrup reaches 120°C, pour the syrup into the robot tank along the wall.
- 8.Keep beating.
- 9.Speed up the robot speed as it cools the meringue.
- 10.The meringue must be in the shape of a shiny bird's beak.
