Ingredients
For 4 servings
- 4 4 egg whites (125 ml or 140 g)
- 125 g 125 g of sour sugar
- 125 g 125 g of icing sugar
Method
- 1.Mount the whites in snow until they are semi-firm.
- 2.Stir in the sour sugar gradually without clogging (approximately 10 min).
- 3.The mixture must be shiny, smooth and homogeneous.
- 4.Stir in ice sugar without too much work and detail the meringues according to your needs.
- 5.Preheat oven to 90°C (thermostat 3).
- 6.Cook 1h15 for a golden meringue.
