Mascarpone foam, strawberries and mint

- 200 g 200 g Mascarpone
- 250 g 250 g Strawberry(s)
- menth leaves
- 15 g 15 g Sugar
- 1 sachet 1 Bag Vanilla sugar
- 2 2 Egg white(s)
Method
- 1.Preparation of strawberries
- 2.Rinse and pick up strawberries. Mix them into coulis.
- 3.Preparation of mascarpone
- 4.Using a robot, beat the mascarpone and sugar and vanilla sugar. Then add the coulis.
- 5.Preparation and addition of snow whites
- 6.Beat the whites in snow and gently incorporate them into the preparation.
- 7.Dressing
- 8.Take 4 verrines and fill them with the preparation.
- 9.Rest
- 10.Put them in the refrigerator for a minimum of 4 hours for the foam to take.
- 11.Finish
- 12.Garnish them with strawberries and mint leaves.
