Pears' mousse

Ingredients
For 4 servings
- 2 2 leaves of gelatin
- 1 1 small can of pears
- 20 cl 20 cl flower cream
- 2 2 c. to s. of syrup
- 1 sachet 1 bags of vanilla sugar
- 15 g 15 g sugar
Method
- 1.Cut the pears into small pieces and mix them.
- 2.Add the sugar, the two tablespoons of syrup and vanilla sugar and mix well with the blender.
- 3.Soak in a bowl filled with cold water, both leaves of gelatin.
- 4.In a saucepan, mix pears/sugar and heat. Add the gelatin and stir well to melt.
- 5.Put the flower cream in chantilly.
- 6.Once the pear purée is well blended with gelatin and cooled, add it to the chantilly.Put in small verrines, and leave it cool for about 3 hours.
