Ingredients
For 4 servings
- 3 3 Egg whites
- 250 g 250 g Sugar powder
- 250 g 250 g Maple syrup
- 300 g 300 g Mixed dried fruit
- 1 pincée 1 pinch Salt
Method
- 1.Mount the white eggs in firm snow with 1 pinch of salt.
- 2.Mix the sugar with 10 cl of water in a saucepan and cook until you get the consistency of a syrup.
- 3.Heat the maple syrup very lightly over low heat and then add it to the sugar syrup. Cook for 2 to 3 minutes without stopping to stir and add to the snow whites by whipping the electric drummer.
- 4.Put the mixture 30 min in a water bath, stirring until it becomes very compact. Incorporate the dried fruits into this paste.
- 5.Place the dough in a rectangular dish lined with sulfurized paper. Cover with paper and put a weight on it. Reserve at least 6 hours before tasting.
