Chinese nougat with peanuts and sesame

Ingredients
For 4 servings
- 150 g 150 g Sugar powder
- 40 g 40 g Unsalted natural peanuts
- 25 cl 25 cl Water
- 15 g 15 g Sesame seeds
- 15 g 15 g Cassava powder
- 1 g 1 g Agar agar powder
Method
- 1.Put the sugar to melt over low heat in a saucepan until you get a blond caramel. Add 15 cl of water and continue cooking about 6 to 8 min.
- 2.Unlay the cassava powder in the remaining 10 cl water. Mix with caramel and agar by whisking gently.
- 3.Roast the peanuts dry in a saucepan and pour the previous mixture over. Continue cooking over very low heat to thicken while constantly mixing. When the dough turns golden, stop cooking.
- 4.Tap a food film mould and pour it in. Place in a cool place for 2 hours.
- 5.Demolish the nougat and cut it into cubes. Drive in sesame before tasting.
