- 1 1 beautiful duck foie gras lobe if possible denerved
- 100 g 100 g dried fruit (pistachios, hazelnuts figsnoixabricots, etc.)
- salt
- pepper
Method
- 1.To make your foie gras nougat:
- 2.Stir gently in fat to avoid melting as much as possible afterwards.
- 3.Thin the dried fruits. Take a terrine and alternately place a layer of seasoned foie gras (salt, pepper), a layer of dried fruit and finish with the rest of foie gras.
- 4.Cook 3/4 hour at 66°.
- 5.Cover the terrine with melted foie gras fat to ensure watertightness and store it in the refrigerator for 24 hours.
- 6.You can now taste your foie gras nougat!
