Nougat de Montélimar

Ingredients
For 4 servings
- 175 g 175 g Honey
- 300 g 300 g Sugar
- 5 cl 5 cl Water
- 1 1 Egg white
- 200 g 200 g A mixture of hazelnuts
- 2 2 Azyme bread leaves
Method
- 1.In a skillet, sauté the hazelnuts and almonds for 1 min and add the pistachios for an additional minute and book them.
- 2.Get the snow whites in a robot. In a saucepan, pour honey, water and sugar and heat until the temperature reaches 140°C.
- 3.Pour the syrup on the whites by turning the robot and let it work for 2 to 3 min.
- 4.Add the dried fruits and pour the mixture into a mould lined with a sheet of azyme bread.
- 5.Cover with the second sheet and allow to harden for a few hours. Cut slices of nougat and taste!
