Nougat frozen with almonds

Ingredients
For 4 servings
- 150 g 150 g Nougatine
- 50 g 50 g Unsalted pistachios
- 100 g 100 g Mondée almonds
- 40 g 40 g Sugar powder
- 100 g 100 g Liquid honey
- 3 3 Egg whites
- 15 cl 15 cl Liquid cream
Method
- 1.Cut the pistachios and almonds coarsely. Break the nougatine into pieces and crumb it to the blender.
- 2.In a saucepan, pour honey, sugar and 5 cl water, then bring to a boil. Then lower the heat and cook for 5 minutes.
- 3.Whisk the whites in very firm snow. Pour the honey syrup into a fillet, and beat until fully cooled.
- 4.Beat the liquid cream in chantilly and gently incorporate it into the previous preparation and add the nougatine, almonds and crushed pistachios. Mix.
- 5.Garnish 6 small individual moulds of sulphurized paper and fill them with preparation. Place in the freezer for 3 hours. Demolize before serving.
