Nougat frozen with dried fruit

Ingredients
For 4 servings
- 60 g 60 g Dried grapes
- 60 g 60 g Hazelnuts
- 60 g 60 g Candied fruit
- 3 3 Large extra-fresh eggs
- 140 g 140 g Sugar powder
- 100 g 100 g Liquid honey
- 40 cl 40 cl Whole liquid cream
- 1 pincée 1 pinch Salt
Method
- 1.Soak the grapes in warm water.
- 2.Crunch the hazelnuts and pistachios coarsely either with a knife or with a robot mixer by pressing the device. Dry them in a non-stick pan. Sprinkle them with 40 g of sugar. Lightly caramelize them by turning them around. Reserve on a plate and let cool.
- 3.Heat honey in a small saucepan over low heat. Separate the yolks from the egg whites. Mount the snow whites with 1 pinch of salt. Gradually pour the boiling honey while continuing to beat them. On the other hand, whisk egg yolks with 100 g of sugar until the mixture whites and then incorporates the whites into the snow.
- 4.Drain the very cold liquid cream in chantilly. Add it with hazelnuts, drained raisins and candied fruit. Pour into a silicone mould (or into a steel mould lined with sulphurized paper). Book 12 hours in the freezer. Demolize and cut aside at the last moment.
