- 130 g 130 g Chocolate black
- 100 g 100 g Sugar
- 100 g 100 g Liquid honey
- 70 g 70 g Skinless almonds
- 30 g 30 g Unsalted shelled pistachios
- 1 1 Egg white
- 3 cl 3 cl Water
Method
- 1.In the bowl of a robot, mount the white snow. In a saucepan, heat water, sugar and honey until the temperature reaches 140°C.
- 2.Pour the syrup over the egg white while continuing to mix. In a saucepan, melt the chocolate and incorporate it into the bowl of the robot.
- 3.Add the pistachios and almonds and mix. Pour this mixture into a cake dish lined with film paper and allow to harden for one night.
