Ingredients
For 8 servings
- 125 g 125 g white wheat flour (T55)
- 125 g 125 g of wheat flour T80 (semi-complete or bise)
- 5 g 5 g sugar
- 5 g 5 g of salt or fine salt
- 12 cl 12 cl milk at room temperature
- 10 g 10 g baker's yeast
- 60 g 60 g of melted butter
- 1 1 egg
- 2 2 c. to s. seed mixture
- 1 1 egg
- 1 1 c. to s. seed mixture
Method
- 1.In a salad bowl, mix the 2 flours, salt and sugar. Dig a fountain. Dilute the yeast into the milk at room temperature. Add the milk to the yeast at the centre of the flour.
- 2.Start mixing with a solid spatula and add the melted butter. Continue to mix and add the beaten egg twice. Add the seeds.
- 3.Film the dough and let it double in volume in the warmest place in your kitchen. Fold the dough and let cool in the refrigerator for an hour.Weigh 30 g pieces for mini-burgers and 80 g for wholesalers.
- 4.Roll the sticks and put them on a five-inch plate. Flatten the pasta balls slightly and brown them lightly. Add the seeds.
- 5.Let the burgers grow a second time. Bake at 175°C for 12 to 20 minutes depending on the size of your burgers.Let the burgers cool before using them.
