Ingredients

- 250 g 250 g sugar
- 125 g 125 g almonds
- 125 g 125 g of nuts
Method
- 1.Mix almonds, hazelnuts and sugar in a skillet or pan and cook over medium heat, mixing constantly with a wooden spoon.
- 2.Heat the mixture until the sugar melts and caramelizes by coating almonds and hazelnuts.
- 3.Be careful the mixture should not burn too much.
- 4.Once the caramel coats the almonds and hazelnuts well, pour the mixture over a flat surface covered with sulphurized paper.
- 5.Spread it evenly with a wooden spoon and let cool completely.
- 6.Once the caramel has cooled and hardened, break it into small pieces (with hands or a hard or cutting object).
- 7.Insert the pieces into a mixer, and mix by stopping your robot from time to time so it doesn't heat too much.
- 8.The first step is to obtain a powder: the pralin.
- 9.As this step is completed, the longest remains to be done:
- 10.continue to mix with shorter breaks (very important to respect so your robot won't let you loose along the way) until you get a more or less thick dough, depending on the use you want to make!
