Sweet potato puree

- 800 g 800 g Sweet potato(s)
- 200 ml 200 ml Milk
- 40 g 40 g Butter
- Salt
- Mill pepper
Method
- 1.Preparation of sweet potatoes
- 2.Peel your sweet potatoes carefully, then rinse them under a water fillet. Then cut them into small cubes.
- 3.Fresh potato water cooking
- 4.Place the pieces of sweet potatoes in a large saucepan and cover with water. Bring to a boil and cook for about 15 min. Check cooking with a knife tip: the flesh of sweet potatoes must be tender.
- 5.Crushing and adding butter
- 6.Drain and reduce the cubes to puree by passing them to the puré press. Add the butter. Stir well the time it melts completely.
- 7.Adding milk and seasoning
- 8.Then pour the milk gradually until you get the desired consistency (more or less thick depending on your preference). Season with salt and pepper at your convenience. You can also add spices that go well with sweet potato: curry, cumin, coriander, ginger, dare exoticism!
- 9.Purée service
- 10.Serve this very hot mashed potatoes with a roasted chicken or steamed fish. Delicious!
