Risotto in potimarron, county and rosemary

Ingredients
For 2 servings
- 0.5 1⁄2 potimarron
- 150 g 150 g rice for risotto (e.g. round rice or arborio)
- 50 g 50 g county
- 1 1 onion(s)
- 2 c. à soupe 2 tablespoons olive oil
- 3 3 rosemary branch(s)
- 1 1 cubic vegetable broth (without salt)
- salt (optional)
- pepper (optional)
Method
- 1.Reconstitute a broth with 500 mL of boiling water and cubic broth (or make an "express" broth by infusing aromatic herbs in boiling water).
- 2.Wash well, and cut the potimarron into small pieces (without peeling). Cut the onion.
- 3.In a hopper (over medium heat), sauté the chopped onion in a fillet of olive oil.
- 4.Add 150g rice for risotto, then cook for about 1-2 minutes, mixing well, until it becomes translucent.
- 5.Add the potimarron dice to the hopper with the rice.
- 6.Then pour a flask of broth into the pan, mix occasionally, until the broth is completely evaporated. Add broth regularly until exhausted. If you no longer have broth, you can finish cooking rice with the potimarron cooking water.
- 7.While potimarron and rice continue to cook, cut the county into small dice. If your rosemary is fresh, chop it.
- 8.When the potimarron is melted (after 15 to 20 minutes of cooking), add the county and rosemary to the risotto. Mix and cook for another 5 minutes over low heat. The risotto is ready!
- 9.For adults, you can add some salt and pepper to season your dish.
- 10.From 4/6 months (smooth puree): in step 2, take 60 to 130g of potimarron (depending on age and appetite), steam it (15-20 min) and mix with some cooking water. Add 1 cc of oil.
- 11.As early as 6 months (heavy purea): in step 2, take 150 g of potimarron and steam (15-20 min). Losqu'il fondue, the blender with some cooking water, 5-10g of county and a small pinch of rosemary. Add 1 cc of oil.
- 12.From 8/9 months (mouliné): take 150 to 180g risotto and mill it all (mixer) or crush with fork until it makes a thick purée.
- 13.From 12 months, if baby is comfortable with the pieces, he can eat like you.
