Rolled with green asparagus and muslin cream

- 250 g 250 g Green asparagus(s)
- 1 1 Egg white(s)
- 2 2 Egg yellow(s)
- 1 c. à café 1 c. Coffee Mustard
- Olive oil
- Sesame seeds
- Salt, pepper
Method
- 1.Preparation of asparagus
- 2.Wash and peel asparagus.
- 3.Cooking asparagus
- 4.Cut the tip and cook in a saucepan filled with boiling water for 20 minutes.
- 5.Set aside
- 6.Once cooked, drain them and let them cool down.
- 7.Preheating the oven
- 8.Meanwhile, preheat the oven to 18°C.
- 9.Preparation of laminated dough
- 10.Roll the laminated dough and cut it into 12 equal strips in length.
- 11.Dressing
- 12.Roll the dough strips around non-stick rollers, brush them with an egg yolk, sprinkle the top with sesame seeds and place them on an oven plate covered with a sheet of baking paper.

- 14.Bake for 10 minutes.

- 16.Once the rolls are cooked, remove the non-stick rollers and let them cool on a grid.
