Lentil, potato and smoked salmon salad

Ingredients

- 200 g 200 g green lentils from Puy
- 4 c. à soupe 4 tablespoons olive oil
- 4 tranche 4 slices smoked salmon
- 4 4 potatoes
- 1 1 shallots
- 1 c. à soupe 1 tablespoon old mustard
- fresh coriander
- 2 c. à soupe 2 tablespoon soy sauce,
- 2 c. à soupe 2 tablespoon cider vinegar
- salt flower
Method
- 1.Prepare the lentils: Soak the lentils in cold water for 12 hours, then drain them and cook them in a pot of water for 20 minutes. Drain them and put them in a large bowl.
- 2.Prepare dressing: In a bowl, mix soy sauce, vinegar, oil, mustard, finely chopped shallots and chiseled coriander. Pour this sauce over the warm lentils and mix well.
- 3.Add salmon: Cut the smoked salmon into thin slats and gently incorporate them into seasoned lentils. Refrigerate.
- 4.Cook potatoes: Peel potatoes, cut into equally sized pieces and steam until tender.
- 5.Dress and serve: Serve the lentil salad with smoked salmon accompanied by the still warm potatoes, sprinkled with a little fleur de sel.
