Fresh Lentil Salad with Greek

Ingredients
For 4 servings
- 500 ml 500 ml cold water
- 160 g 160 gr green lentils
- 300 g 300 gr cherry tomatoes
- feta
- 1 1 red onion
- olive oil
- parsley
- 1 1/2 yellow pepper (optional)
- salt
- pepper
Method
- 1.First rinse the lentils, then put them in a saucepan with cold water. Cover and cook for 20 minutes over medium heat until tender.
- 2.Once cooked, drain the lentils thoroughly and let them cool completely to room temperature.
- 3.Meanwhile, wash all your vegetables. Finely chop the red onion and fresh parsley, then cut the tomatoes and pepper into small pieces.
- 4.In a large bowl, combine the cooled lentils, all the prepared vegetables and the feta cut into small cubes. Gently mix it all together.
- 5.Finally, season your salad with salt and pepper according to your taste, then generously sprinkle with olive oil. Your salad is ready to taste!
