Ingredients
For 6 servings
- 1 /2 teaspoon finely grated lemon zest plus 1/4 cup (60 ml) lemon juice from 2 medium lemons
- Kosher salt and freshly-ground black pepper
- 3 /4 cup (180 ml) extra-virgin olive oil
- 2 garlic cloves, minced
- 3 /4 cup fresh oregano leaves (3/4 ounce; 21 g), finely minced
- 3 /4 cup fresh parsley leaves (3/4 ounce; 21 g), finely minced
Method
- 1.In a medium bowl, whisk lemon zest, juice, 3/4 teaspoon salt, and 1/2 teaspoon pepper together.
- 2.In a microwave-safe liquid measuring cup, combine oil and garlic and microwave on high until fragrant and warm to the touch, 25 to 30 seconds. Let mixture cool completely, at least 5 minutes.
- 3.Slowly drizzle cooled oil mixture into lemon juice while whisking vigorously. Whisk until oil is fully incorporated and the mixture is evenly cloudy yellow.
- 4.Stir in oregano and parsley. Season with salt and pepper to taste.
