Ingredients

- 4 4 shallots
- 10 cl 10 cl brown background
- 10 cl 10 cl dry white wine
- 10 g 10 g butter
- 1 1 Minced parsley
- 1 1 Mill pepper
- 1 1 Salt or fine salt
Method
- 1.Hit the scallop.
- 2.With a little butter, cook the shallot in a saucepan for 10 min over low heat.
- 3.Add the dry white wine.
- 4.Let it be reduced.
- 5.Add the brown background.
- 6.Allow to reduce until you get a stunning consistency.
- 7.Scissor the parsley.
- 8.Add a nut of butter and parsley.
