Creamy and refined morilla sauce

Ingredients

- 40 g 40 g dried morillas
- 20 cl 20 cl of whole liquid cream ( 30% MG )
- 20 g 20 g butter
- 2 2 shallots
- 1 verre 1 glasses of dry white wine
- 1 1 Salt or fine salt
Method
- 1.Prepare the morels: Cut the morels in half and soak them in warm water for about 1 hour to rehydrate them well.
- 2.Prepare shallots: Meanwhile, peel and finely chop shallots.
- 3.Sweat the shallots: In a saucepan, melt butter and sweat the chopped shallots until they become translucent.
- 4.Cook the morillas: Add the drained morillas and gently let them return over low heat for about ten minutes.
- 5.Deglaze and add the cream: Pour the glass of white wine, let it halve, then incorporate the cream. Simmer over very low heat for 10 minutes.
- 6.Finish the sauce: Mix the sauce to get a smooth texture, then pass it to Chinese for a perfectly velvety result.
