Ingredients
For 4 servings
- 200 g 200 g Smoked breast
- 150 g 150 g Grated Parmesan
- 3 3 Egg yolks
- Salt
- Pepper
Method
- 1.Cut the smoked breast into small bacon.
- 2.Brown the bacon in a skillet over medium heat for 5 to 8 minutes, mixing regularly.
- 3.Meanwhile, place the egg yolks in a bowl. Add a layer of pasta cooking water and whisk vigorously to the fork. Season with salt, pepper and add half the Parmesan before mixing again.
- 4.Serve this sauce with hot pasta, sprinkled with grilled bacon and the rest of grated Parmesan.
