Express sauce with chanterelles

Ingredients
For 4 servings
- 375 g 375 g Chanterelle(s)
- 30 g 30 g Butter
- 3.75 dl 3.75 dl Whole cream
- 1 1 Shallots
- 1 dl 1 dl White wine
- 1 1 bouquet(s) Persley
- Salt
- pepper
Method
- 1.Prepare the chanters by cutting the tip of the feet, then gently clean them with a cloth or a small brush. Meanwhile, finely chop the shallot and parsley (keep some for the end).
- 2.In a frying pan, melt the butter and sauté the shallot for a few minutes until it becomes slightly golden.
- 3.Add the chanterelles to the pan, salt and pepper to your taste, then pour the white wine. Let it reduce quietly.
- 4.Once the sauce has been reduced, add the fresh cream and chopped parsley. Simmer over low heat for about 5 minutes.
- 5.Serve the sauce with the rest of the fresh parsley on top to bring a touch of freshness and colour.
