Ingredients
For 4 servings
- 200 g 200 g butter
- 3 3 egg yolks
- 1 1/2 lemons
- pepper
- salt
Method
- 1.Press the lemon juice, set aside. Cut the butter into dice.
- 2.Beat the egg yolks with 2 tablespoons of cold water.
- 3.Place in a hot water bath and whisk until you get a light foamy cream.
- 4.Then add the butter into pieces in several times, whipped well each time.
- 5.Season with salt, pepper and add the lemon juice before serving.
