  • 8 pork sausages
  • 1 medium head of cauliflower cut into small florets and leaves chopped
  • 1 head of broccoli cut into medium florets, stalk peeled and cut into chunks
  • 1 red onion cut into wedges
  • 3 c. à soupe red wine vinegar
  • 1,5 c. à soupe honey
  • 3 c. à soupe wholegrain mustard
  • 3 c. à café fennel seeds
  • 3 c. à soupe olive oil
  • 50 g soft butter
  • 3 garlic cloves crushed
  • 2 c. à soupe chopped basil, parsley and thyme
  • 2 sourdough slices cut into cubes

Method

    Heat the oven to 200C/180C fan/gas 6. Toss the sausages, cauliflower, broccoli and onion into a baking tray. Whisk the vinegar, honey, mustard, fennel seeds and oil together. Pour over the sausages and veg, and season. Roast for 25-30 mins until golden, sticky and glazed. Give everything a turn halfway through cooking.

    Melt the butter, garlic and herbs with some seasoning in a bowl in the microwave or in a small pan. Toss in the bread cubes and toss well. Scatter the croutons over the traybake and bake for 5-10 mins more, until golden and crisp. Serve with potatoes, if you like.
