- 1 eggplant, cut crosswise into 1/2-inch slices
- 2 c. à soupe olive oil
- 1 c. à café garlic powder
- 0.5 c. à café smoked paprika
- 0.5 c. à café Italian seasoning
- 1 c. à café salt
Method
- 1.Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- 2.Place eggplant slices in a single layer on the prepared baking sheet. Drizzle with olive oil; sprinkle with garlic powder, smoked paprika, and Italian seasoning.
- 3.Roast in the preheated oven until golden and crispy, about 25 minutes. Sprinkle with salt.
