Rhubarb syrup (crystalline sugar)

Ingredients

- 15 15 rhubarbs
- 1 l 1 l of water
- crystallised sugar (see preparation for quantities)
Method
- 1.Peel and cut into pieces fifteen stems of rhubarb, cook 6 to 8 minutes in a litre of water.
- 2.Pour over a sieve of horsehair, extract all the juice, which is gently cooked for 15 minutes with the same weight of crystallised sugar.
- 3.Scum and bottle all boiling.
- 4.Seal immediately hermetically.
