Smoky, Crispy Shiitake "Bacon"

- 1 lb (454 g) shiitake mushrooms, stemmed and sliced 1/2-inch thick
- 1 1/2 tablespoons (10 g) smoked paprika
- Kosher salt and freshly ground black pepper to taste
- 1 /2 cup (120 ml) extra-virgin olive oil
Method
- 1.Adjust oven rack to lower-middle and preheat to 400°F (200°C). In a 10-inch cast iron skillet, toss sliced mushrooms with smoked paprika, salt, pepper, and olive oil to evenly coat.
- 2.Roast mushrooms, using tongs or a wooden spoon to toss occasionally, until very well browned and edges are crispy, 35 to 40 minutes. Serve hot or at room temperature.
