Onion soup by Laurent Mariotte

Ingredients
For 4 servings
- 600 g 600 g yellow onion
- 40 g 40 g butter
- 1 c. à café 1 teaspoons of salt
- 1 1/2 teaspoons of black pepper
- 8 tranche 8 slices of roasted baguette
- 160 g 160 g grated cheese
Method
- 1.Peel and finely slice the onions.
- 2.Melt butter in a saucepan over low heat. Add the onions, cover and cook for 10 minutes, mixing occasionally.
- 3.Remove the lid and continue cooking for 15 minutes, mixing regularly.
- 4.Boil 1,3 litres of water. Pour 1 flask of boiling water into the pan and mix thoroughly.
- 5.Add the rest of the water and simmer for 15 to 20 minutes until the soup has reduced by a quarter. Salt and pepper.
- 6.Pour the soup into 4 heat resistant bowls. Add 2 slices of bread in each bowl, sprinkle them with grated cheese and gratin under the grill of the oven.
- 7.Enjoy this hot soup.
